Cocktail Of The Week: Piña Coladas

When the summer begins to heat up, there’s nothing like a good tropical drink to get you in the summer mood. If only that drink came with a white sandy beach… well, I guess you can’t have everything. You’ll just have to make do with an awesome piña colada – and perhaps a pool if you’re lucky enough to have one. Otherwise, post a picture of the beach on your wall, and look at it while you sip your drink. Breath deep. Exhale. Can you smell the ocean? Almost?

Piña Colada:
Makes 3 drinks

6oz golden rum
4oz coconut milk (NOT COCO LOPEZ! That is full of nasty stuff. You want 100% natural, no gunk added, coconut milk. I promise it’ll be thick enough. Promise. Native Forest Organic is quite good)
8oz pineapple juice (fresh is preferable, but the 100% natural, no sugar added jarred stuff is ok too. Try Lakewood Juices brand)
Juice of 1/4 lime
15-18 ice cubes

Put all liquid ingredients in a blender and turn on. Add the ice cubes one at a time through the top until all ice has been added and just blended. Pour into ice cold goblets and enjoy. If you made your own pineapple juice, maybe you have a few extra slices of pineapple to garnish with!
